What is bacon?
What is bacon? about.com has one of the better answers that I've seen with multiple links. In fact they have the only article that I have been able to find on the history of bacon... Then again I am a cheep graduate student, so I have not yet to buy any of the bacon cook books that might discuss the history of bacon. Enjoy rummaging around these articles.

Thanks Kate. I need to find more history of bacon, but that seems to be much harder then I would have thought. It seems like bacon just has always been there as a constant, and taken for granted. Oh well, I'm sure some day we'll come across the real story.
